Rosario's Italian Dining - reviewed by Desiree Jensen
A disclaimer at the bottom of an inside page of their menu advises customers that the kitchen staff is Italian and any screaming or breaking of dishes is to be expected.  Rosario’s is a family owned Italian restaurant in Pueblo, Colorado.

The disclaimer in the menu is all in fun; at least I have not had any of those experiences in my frequent visits to the establishment, and adds to the atmosphere.

Also on the menu, diners will find an assortment of Italian cuisine, ranging from the standard spaghetti and meatballs to, my personal favorite, cheese tortellini in a champagne cream sauce.

The first course of every meal is a loaf of fresh baked bread and roasted garlic, followed by a choice of soup or salad. The choices are minimal; two salad dressings, traditional Italian or creamy Pesto, and one soup, chicken Minestrone, which is topped with shredded Romano cheese and has a certain kick (it is my starter of choice).

The meal doesn’t end with the main course. Also available is an assortment of delectable desserts: cheesecake, Tiramisu, and Spumoni ice cream (with the works, chocolate sauce and cherries), to name just a few. And the prices are reasonable. Even with ordering the special (only on Friday and Saturday nights), which can range from simple pasta dishes to sea scallops and calamari, two people can have the full four course meal; bread, starter, entrée and dessert for between $40 and $50.  Rosario’s in Pueblo is not limited to merely a fine dining establishment. Also available are an exquisite patio banquet room and offsite catering services.

So, if you are looking for a great meal of fabulous Italian cuisine, give Rosario’s a chance. Located at 2930 N. Elizabeth St, one half mile south of Highway 50 West in Pueblo, Colorado.
